Weekday Lavazza base. Brooklyn Roasting Company on rotation. Origin stories you can hear with the kettle on — the same briefing that lands at 7:45 AM.

Weekday base

Lavazza

Everyday Italian house coffee · reliable · automatic ritual

Lavazza is the cup you don’t have to think about. Consistent roast, friendly body, built for weekday mornings when the briefing after marketing at 7:30 just needs to land clean.

Origin story (briefing script). This morning’s base is Lavazza — Italian roasting tradition aimed at a steady, chocolate-leaning cup rather than a tasting flight. You’re not chasing terroir today; you’re building the habit. Grind, pour, drink. Tomorrow the rotation can surprise you.

Recipe — classic pour-over

  • 22g Lavazza, medium-fine
  • Water ~200°F / 93°C
  • Bloom 60g for 30 seconds, then pour in circles to 350g total (~3 minutes)
  • Black, or a splash of milk

Recipe — quick spiced latte

  • Strong double shot or 6 oz strong Lavazza
  • 1 cup milk frothed with pinch cinnamon, pinch cardamom, 1 tsp maple or honey
  • Coffee into milk; dust with cinnamon

Recipe — maple pumpkin weekday treat

  • 6 oz strong Lavazza
  • 1 cup milk + 1 tbsp pumpkin puree + 1 tsp maple + ¼ tsp pumpkin pie spice + drop vanilla
  • Whisk smooth, combine, dust with spice

Brooklyn Roasting Company · bestseller

Iris Espresso

Brazil · Peru · Ethiopian natural · berries, cocoa, fig, root beer, honey

BRC’s year-after-year bestseller. Coffees roasted separately then blended for thick crema and a sweet-spicy finish. Competition-caliber espresso that still works in a moka pot or strong morning pull.

Origin story (briefing script). Iris pulls Brazil’s chocolate base, Peru’s sweetness, and an Ethiopian natural’s berry lift into one cup. It’s Brooklyn’s house “wow” espresso — not a single farm story, but a blender’s story: three origins, one thick crema, a finish that somehow nods at root beer and honey. Brew it when you want specialty energy without abandoning espresso comfort.

Suggested brew

  • Espresso: ~18g in for a double; taste black before milk
  • Or moka pot / strong Aeropress — keep it bold so the blend’s layers show

Brooklyn Roasting Company · experimental tasting

Ethiopia Natural

Sidama / Durame · natural process · floral, blueberry, cocoa

Sun-dried on raised beds — fruitier and more surprising than washed Ethiopians. Light-leaning roast so florals and blueberry stay loud.

Origin story (briefing script). These cherries dried in the fruit under Ethiopian sun near Durame, high enough that the air is cool and the sugars concentrate slow. Natural process means the bean lived with its pulp for days — that’s why you get blueberry and flowers instead of just lemon tea. Today’s cup is a tasting flight in one mug. Brew it black. Listen before you add anything.

Suggested brew

  • Pour-over, 22g → 350g, water ~195–200°F
  • Slightly finer grind, longer pauses between pours
  • Taste black first

Brooklyn Roasting Company · balanced single-origin

Colombia Tolima

Planadas, Tolima · washed · chocolate & pecan

High mountain lots, bright but balanced, “baked cookie” aroma. The weekday-adjacent single-origin — special without shouting.

Origin story (briefing script). Tolima sits in Colombia’s cordillera where volcanic soil and altitude push sweetness into the seed. Washed process keeps the cup clean: dark chocolate, stone fruit, pecan. This is the rotation pick when you want origin character that still plays nice with a calendar full of meetings.

Suggested brew

  • Standard pour-over 22g → 350g at ~200°F
  • Great black or with a thin splash of milk

Brooklyn Roasting Company · friendly Central American

Nicaragua Prodecoop

Fair Trade Organic · Prodecoop cooperative · milk chocolate, apple, brown sugar

SHG arabica from family farms under the Prodecoop umbrella across Las Segovias. Cups like a balanced blend even though it’s single-origin.

Origin story (briefing script). Prodecoop is thousands of smallholders sharing a washing station and a reputation — milk chocolate, apple, brown sugar in the cup. It’s cooperative coffee with a soft landing: origin with manners. Brew it when you want single-origin pride without the funk.

Suggested brew

  • Pour-over or batch brew; medium grind
  • Forgiving ratio — 22g → 350g works well

Brooklyn Roasting Company · bold & earthy

Sumatra Ketiara

Central Aceh · wet-hulled · earthy, dark chocolate, plum

Heavy body, smoky-herbal depth, women-led Ketiara cooperative story. The elephant of the rotation — darker, louder, excellent when you want weight in the mug.

Origin story (briefing script). Wet-hulled Sumatra is a processing signature of the island — earth, dark chocolate, plum, sweet herbs. Ketiara grew from a handful of members into a cooperative known for women leading the work. Today’s cup is big-bodied on purpose. Skip the delicate pour ritual if you want; this one likes strength.

Suggested brew

  • French press, moka, or coarser pour-over
  • Or cold-brew concentrate: 1 cup coarse grounds + 4 cups water, 12–16 hours, dilute 1:1

How this stays current

Rotation note

Lavazza anchors most weekdays. Brooklyn Roasting Company beans rotate so the week doesn’t go flat — Iris for espresso energy, Ethiopia Natural for tasting, Colombia or Nicaragua for friendly origin cups, Sumatra when you want depth. The 7:45 AM Morning Sip Bot briefing picks the day’s bean and reads you the story; this page is the written home for the same set.
